- 1/2 medium yellow onion
- 2 tablespoons coconut sugar
- 1/2 cup sushi vinegar
- 1 teaspoon salt, kosher variety

Step 3Use a mandoline, or sharp knife to cut the onion to the desired thickness.

Step 6Add the coconut sugar, vinegar, and salt to a small saucepan, and bring up to a simmer.
