The onions will still be a bit crisp, and the combination of the sugar and vinegar give them a sweet/sour taste that’s hard to beat.

How to Make Veggie Essentials: Pickled Yellow Onions


  2. Gather your Ingredients (mise en place).
  3. Use a mandoline, or sharp knife to cut the onion to the desired thickness.
  4. Chef's Tip: The thickness of the slices will determine how crisp they are... the thicker the crisper.
  5. Add the sliced onions, to a sealable glass container.
  6. Add the coconut sugar, vinegar, and salt to a small saucepan, and bring up to a simmer.
  7. Pour the hot liquid over the onions, and allow them to cool down to room temperature.
  8. Seal and place into the refrigerator overnight.
  10. These onions have many uses; for example, you could use them to dress up a nice balsamic salad, or scatter them over a nice steak or pork chop. It’s up to you. Enjoy.
  11. Keep the faith, and keep cooking.
