vegetarian potato stacks

This version of my potato stackers was just so mouth watering good, I wanted to post it as a vegetarian recipe. It can be a side, or a complete meal. My son is not a fan of baked potatoes??? but he gobbles these down!

Ingredients

  • 2 large russet potatoes
  • 2 - tomatoes
  • 1 - red onion
  • 2 - portabella mushrooms
  • - olive oil
  • - mrs. dash original blend, black pepper, granulated garlic
  • - favorite cheese (2%)
  • - thai chili sauce
  • - cilantro, fresh

How To Make vegetarian potato stacks

  • Step 1
    You can layer these in any fashion, and top with any condiment or dairy item you choose.
  • Step 2
    Slice potatoes longways, about 1/4" thick. Toss potatoes with olive oil and seasoning you prefer. Cook on griddle or grill over med. heat with lid on for about 15 min. then flip and cook other side about the same amount of time. You want them fork tender.
  • Step 3
    Meanwhile cook tomatoes and mushroom slices, and onion till tender, about 10 min.
  • Step 4
    I spread some Thai sauce on my potato, then added tomatoes and sprinkle with very little cheese, then another slice of potato, then onion and cheese, then another slice of potato, top with mushrooms and cheese. Micro for 1 min. or till cheese melts. Garnish with cilantro. NOTE: You could sub butter or sour cream for the chili sauce.
