Ingredients

  • 3/4 cup fresh lima beans
  • 1 1/4 cups fresh corn
  • 1 - red bell pepper, seeded and diced
  • 1 - green bell pepper,seeded and diced
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper
  • 3/4 cup whipping cream
  • 2 tablespoons olive oil, light
  • 1/4 cup dry white wine
  • 2 tablespoons unsalted butter
  • 1 medium tomatoe seeded, peeled and chopped
  • 1 tablespoon chopped fresh chives

How To Make vegetable succotash

  • Step 1
    place beans in boiling water to cover in a small saucepan, simmer 3 minutes or until crisp and tender. Drain rinse with cold water, and drain
  • Step 2
    Sauté corn kernels, chopped bell peppers, salt, and pepper in hot oil in a medium skillet over medium-high heat for 6 minutes or until corn is tender, Add garlic, sauté for 30 seconds. Stir in wine and cook 1 minutes.
  • Step 3
    Add whipping cream and beans, reduce heat to medium-lo and simmer, covered 25 to 30 minutes. until beans ore tender. Remove from heat and add butter, and chopped tomatoes, chives and stir just until combined. Enjoy......
