My sister was the first one to introduce me to pilaf. Now I am always looking for and trying pilaf recipes. Pilaf is so versatile and it can be tweaked to suit just about any taste. I prefer to use brown rice, but you can use white rice if you like.

Ingredients

  • 1/4 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1/2 teaspoon basil, dried
  • 1/8 teaspoon black pepper
  • 1 cup uncooked, long-grain rice
  • 2 cups chicken stock
  • 3/4 cup frozen mixed vegetables, thawed

How To Make vegetable pilaf

  • Step 1
    Coat skillet with cooking spray and place bell pepper, garlic, basil, black pepper, and rice in skillet. Cook, stirring constantly, until rice is browned and bell pepper is crisp tender.
  • Step 2
    Stir in stock. Heat to boiling. Cover and cook on low 10 minutes.
  • Step 3
    Stir in thawed vegetables; cover and cook 10 more minutes or until rice and vegetables are tender.
