My sister was the first one to introduce me to pilaf. Now I am always looking for and trying pilaf recipes. Pilaf is so versatile and it can be tweaked to suit just about any taste. I prefer to use brown rice, but you can use white rice if you like.

1/4 c
chopped red bell pepper
2 clove
garlic, minced
1/2 tsp
basil, dried
1/8 tsp
black pepper
1 c
uncooked, long-grain rice
2 c
chicken stock
3/4 c
frozen mixed vegetables, thawed

How to Make Vegetable Pilaf


  • 1Coat skillet with cooking spray and place bell pepper, garlic, basil, black pepper, and rice in skillet. Cook, stirring constantly, until rice is browned and bell pepper is crisp tender.
  • 2Stir in stock. Heat to boiling. Cover and cook on low 10 minutes.
  • 3Stir in thawed vegetables; cover and cook 10 more minutes or until rice and vegetables are tender.
