My sister was the first one to introduce me to pilaf. Now I am always looking for and trying pilaf recipes. Pilaf is so versatile and it can be tweaked to suit just about any taste. I prefer to use brown rice, but you can use white rice if you like.

Ingredients
- 1/4 cup chopped red bell pepper
- 2 cloves garlic, minced
- 1/2 teaspoon basil, dried
- 1/8 teaspoon black pepper
- 1 cup uncooked, long-grain rice
- 2 cups chicken stock
- 3/4 cup frozen mixed vegetables, thawed
How To Make vegetable pilaf

Step 1Coat skillet with cooking spray and place bell pepper, garlic, basil, black pepper, and rice in skillet. Cook, stirring constantly, until rice is browned and bell pepper is crisp tender.

Step 2Stir in stock. Heat to boiling. Cover and cook on low 10 minutes.

Step 3Stir in thawed vegetables; cover and cook 10 more minutes or until rice and vegetables are tender.
