Bisquick recipe idea: I love my Bisquick and this is a great recipe to use up some of those end of summer vegetables. Like those never ending zucchini; but don't stop there- you can change up the vegetable to whatever you have on hand or what your family likes. This can be ready to bake in 15 minutes. Put in oven for 35 minutes and you are good to go!! Make extra- freezes well.For 2 people just use half the recipe ingredients and bake in a 8x4 inch loaf pan.

Ingredients

  • 1 cup chopped zucchini or broccoli, etc.
  • 2 cups ripe tomato chopped
  • 1/2 cup chopped onion
  • 2/3 cup grated parmesan cheese
  • 1/2 cup bisquick heart smart baking mix
  • 1 cup fat free skim milk
  • 1 cup fat free egg product or 2 large whole eggs, beaten
  • 1/4 teaspoon each salt and pepper

How To Make vegetable bake

  • Step 1
    Heat oven to 400^. Lightly spray a 9x13-inch baking dish. Sprinkle zucchini, tomato , onion and cheese in that order in the dish.
  • Step 2
    In a medium bowl, stir remaining ingredients with a fork or whisk until blended. Pour over vegetables and cheese.
  • Step 3
    Bake for 30-35 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving. --- Note:This photo with bacon- gotta have my bacon. Cooked chopped ham, bacon, sausage ,hot-dogs or spam diced may be added if you desire a meaty dish.
