I have to have tomatoes made this way every year. Any tomato will do.

This is also good with sliced, seeded cucumber.

  • 2 medium
    tomatoes, fresh
  • 1 small
    scallion, sliced thin
  • 4 sprig(s)
    basil, fresh
  • 4 Tbsp
    olive oil
  • 4 tsp
    balsamic vinegar
  • ·
    salt and pepper to taste

How to Make Tomato Salad


  1. Slice tomatoes and arrange on 4 salad plates. (can use lettuce as a bed if desired)
  2. Slice scallion and sprinkle evenly over the 4 servings of tomatoes
  3. shred basil leaves and sprinkle evenly over the 4 servings of tomatoes
  4. Drizzle 1 tablespoon of olive oil and 1 teaspoon of balsamic vinegar over each serving.
  5. Add salt and pepper as desired
  6. serve immediately
  7. Using 2 cups Cherry tomatoes:
  8. cut each tomato in half and put in medium bowl
  9. sprinkle remaining ingredients over tomato halves and toss until coated
  10. Serve immediately
