I have to have tomatoes made this way every year. Any tomato will do. This is also good with sliced, seeded cucumber.

Ingredients

  • 2 medium tomatoes, fresh
  • 1 small scallion, sliced thin
  • 4 sprigs basil, fresh
  • 4 tablespoons olive oil
  • 4 teaspoons balsamic vinegar
  • - salt and pepper to taste

How To Make tomato salad

  • Step 1
    Slice tomatoes and arrange on 4 salad plates. (can use lettuce as a bed if desired)
  • Step 2
    Slice scallion and sprinkle evenly over the 4 servings of tomatoes
  • Step 3
    shred basil leaves and sprinkle evenly over the 4 servings of tomatoes
  • Step 4
    Drizzle 1 tablespoon of olive oil and 1 teaspoon of balsamic vinegar over each serving.
  • Step 5
    Add salt and pepper as desired
  • Step 6
    serve immediately

    Using 2 cups Cherry tomatoes:
  • Step 8
    cut each tomato in half and put in medium bowl
  • Step 9
    sprinkle remaining ingredients over tomato halves and toss until coated
  • Step 10
    Serve immediately
