Tomato Salad

I have to have tomatoes made this way every year. Any tomato will do.

This is also good with sliced, seeded cucumber.

2 medium
tomatoes, fresh
1 small
scallion, sliced thin
4 sprig(s)
basil, fresh
4 Tbsp
olive oil
4 tsp
balsamic vinegar
salt and pepper to taste


1Slice tomatoes and arrange on 4 salad plates. (can use lettuce as a bed if desired)
2Slice scallion and sprinkle evenly over the 4 servings of tomatoes
3shred basil leaves and sprinkle evenly over the 4 servings of tomatoes
4Drizzle 1 tablespoon of olive oil and 1 teaspoon of balsamic vinegar over each serving.
5Add salt and pepper as desired
6serve immediately
7Using 2 cups Cherry tomatoes:
8cut each tomato in half and put in medium bowl
9sprinkle remaining ingredients over tomato halves and toss until coated
10Serve immediately
