This is one of my husband's favorites, especially now that fresh tomatoes are in.

Ingredients

  • 4 - med. tomatoes, peeled and cut into 1/2 "' slices
  • 1/2 teaspoon salt
  • 1/2 cup mayonnaise
  • 2 tablespoons fresh chopped basil
  • 1 cup mozzarela cheese, shredded or can use parmesan cheese
  • 1 - pastry pie shell

How To Make tomato pie

  • Step 1
    Preheat oven to 350 degrees. Place tomatoes in a single layer on paper towels and sprinkle with the salt. Let stand 30 min and pat dry with paper towels. Stir together mayonnaise, basil and 3/4 c. of the cheese. Bake pie shell until lightly browned. Sprinkle remaining 1/4 c. of cheese on bottom of pie crust when you remove it from the oven. Arrange tomato slices over cheese and spread mayonnaise mixture over tomatoes. Bake 34-35 min. Let cool 5 min. before serving.
