Harvesting Tomatoes and Cukes, and We love this Simple to put together Fresh "Chunky" Garden Salad. This is a simple salad to Put together, But Note, It does Need to Marinate to Flavor the Vegies. That is what the 3 Hrs is in the time of this recipe. only takes 10 min max to prepare.

Ingredients

  • 2 large - cucumbers, peeled and sliced
  • 2 large - fresh garden tomato diced or cherry tomatoes sliced in 1/2
  • 1 Cup - italian dressing or red wine vinegar
  • 1 1/2 tsp - sugar
  • 1 Med - red or yellow onion
  • 1 - red or green or both bell pepper, (optional)
  • 3 Cloves - garlic crushed
  • - fresh ground pepper to taste (optional)
  • - avacodo, diced in chunks, ( another option)

How To Make tomato & cucumber summer salad by freda

  • Step 1
    Wash and Strip Green Rind off the Cukes every 1/2 inch around Cukes leaving some rind on the cukes, In Medium Bowl, Slice and Cut slices in quarters.
  • Step 2
    Slice and dice tomatos. If using Cherry Tomatoes, Cut each in 1/2. Slice and Chop 1 " pieces of Onion. Add to Cukes in the Bowl. Add Avacodo, (OPTIONAL) Add Crushed Garlic, toss this all very well.
  • Step 3
    Pour Dressing or RED Wine Vinegar over Vegies, Marinate 2-3 Hrs in refer before Serving chilled. I serve this Drained with a slotted spoon in a lettuce leaf Cup.
