I love bean salad and it is a great side dish for most meals. Simple to make, healthy, fresh and yummy! I could eat this all by itself even! Ingredients
- 1/2 - of a red onion, finely chopped
- 1 - green pepper, cut into small cubes
- - juice of a lemon
- 1 tablespoon cumin
- 1 1/2 tablespoons balsamic vinegar
- 3 tablespoons fresh italian parsley, chopped or can use cilantro
- 1/4 cup olive oil
- 1 cup chick peas
- 1 cup kidney beans
- 1 cup black beans
How To Make three bean salad

Step 1Start by cutting your veggies. Then drain and clean the beans and place them in a big bowl. In a smaller bowl, mix the rest of the ingredients very well until blended. Pour the mixture onto the beans and mix well. Cover and refrigerate overnight.
