I love tomatoes and squash is my favorite summer vegetable. Being from the south - I do love my fried foods! I've had to learn to cook low fat due to health reasons and these "almost fried" vegetables are pretty close to the real thing.

Ingredients For the unfried fried green tomato and squash

    green tomatoes, sliced
  • 2
    yellow squash, sliced
  • 1 1/2 c
    flour, plain
  • 2 lg
    eggs, beaten
  • 1 1/2 c
    panko bread crumbs
  • salt/pepper to taste

How To Make the unfried fried green tomato and squash

    Preheat oven to 400 degrees. Slice green tomatoes and squash (not too thick. Sprinkle each slice with salt and pepper to taste.

    Set up three bowls: 1) flour 2) beaten eggs 3) panko Dip each slice first in flour, then in egg wash, last in panko.

    Spray a broiler pan with cooking spray. Place coated vegetables on pan. Spray tops lightly with cooking spray. Bake at 400 degrees 15 minutes. Remove from oven; turn each vegetable over, spray what is now the top with cooking spray, return to oven. Bake an additional 15 minutes.
