A great summer side dish, that I threw together. Some fresh corn off the cob would be great in this as well. Add some meat and it would be hearty enough to serve as a meal. Enjoy!

Ingredients

  • 6 slices bacon, chopped and fried - reserving drippings
  • 1 large sweet onion, fine dice
  • 1 large clove garlic, minced
  • 1 small each - yellow squash & zucchini chopped small
  • 1/2 small head of cabbage, chopped
  • 1 large chopped tomato
  • 1/3 cup chicken broth
  • 1/2 - 3/4 teaspoons italian seasoning
  • 1/2 - 3/4 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/4 - 1/3 cup grated parmesan cheese
  • 20 ounces cannellini beans, drained and rinsed

How To Make ~ tasty veggie & bean medley ~

  • Step 1
    In a large skillet or a wok as I used, cook bacon until crisp. Drain. Leave three tablespoons bacon drippings in skillet. Add the garlic and onion and fry until tender. Add the squashes, tomato, broth, salt, pepper, italian seasoning, cabbage and stir. Place a lid over mix and steam for 10 minutes or until crisp tender, stirring occasionally. Stir in the beans and cheese - cook until beans are heated through.
  • Step 2
    Serve with crumbled bacon and more cheese if desired. A few pinches if red pepper flakes is great on this as well.
