This was a recipe that they used to serve at Wednesday night suppers sometimes at the church where I grew up. Of course they made huge batches, but this is the closest I could get. They were so sweet....they knew as my mom grew older she couldn't tolerate onions or any kind, and always made her a portion without the green onions instead of just giving her plain peas.

Ingredients For swiss peas

  • 10 oz
    package frozen english peas
  • 2/3 c
    sliced green onions
  • 1 Tbsp
    butter,melted
  • 2/3 Tbsp
    all-purpose flour
  • 1/6 tsp
    salt
  • 2/3 c
    whipping cream
  • 1/3 tsp
    grated lemon rind
  • 1/2 c
    shredded swiss or gruyere cheese (2 ounces)

How To Make swiss peas

  • 1
    Cook the peas according to the package directions; drain well and set peas aside.

    Saute the green onions in butter in a medium saucepan over medium heat until tender. Reduce heat to low, and add the flour and salt, stirring well.

    Cook for 1 minute, stirring constantly. Gradually add the whipping cream and lemon rind; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.

    Add the Swiss cheese; cook, stirring constantly, until the Swiss cheese melts. Stir in the reserved peas and cook until the mixture is thoroughly heated.
