swiss peas
This was a recipe that they used to serve at Wednesday night suppers sometimes at the church where I grew up. Of course they made huge batches, but this is the closest I could get. They were so sweet....they knew as my mom grew older she couldn't tolerate onions or any kind, and always made her a portion without the green onions instead of just giving her plain peas.

Ingredients
- 10 ounces package frozen english peas
- 2/3 cup sliced green onions
- 1 tablespoon butter,melted
- 2/3 tablespoon all-purpose flour
- 1/6 teaspoon salt
- 2/3 cup whipping cream
- 1/3 teaspoon grated lemon rind
- 1/2 cup shredded swiss or gruyere cheese (2 ounces)
How To Make swiss peas

Step 1Cook the peas according to the package directions; drain well and set peas aside.

Step 2Saute the green onions in butter in a medium saucepan over medium heat until tender. Reduce heat to low, and add the flour and salt, stirring well.

Step 3Cook for 1 minute, stirring constantly. Gradually add the whipping cream and lemon rind; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.

Step 4Add the Swiss cheese; cook, stirring constantly, until the Swiss cheese melts. Stir in the reserved peas and cook until the mixture is thoroughly heated.
