Ingredients

  • 1 c
    baby spinach - washed
  • 1 c
    romaine lettuce leaves - washed and chopped
  • 1 c
    mandarin oranges - (or small orange slices)
  • 1
    handful of sugar snap peas - tips trimmed
  • 1/2 c
    green grapes - cut in halves
  • 1/2 c
    almonds - chopped
  • 3/4 c
    dried cranberries - (or craisins)
  • 1 Tbsp
    cold pressed extra virgin olive oil
  • 1/3 c
    juice from 1 orange
  • 3 Tbsp
    juice from 1 lemon
  • 1 tsp
    raw bee honey with pollen

How to Make Sweet Spinach Salad

Step-by-Step

  1. In a small bowl mix the olive oil, orange juice, lemon juice, and honey. You will need to mix it with a spoon well to help break down the honey. Set the bowl aside.
  2. In a large salad bowl toss the remaining ingredients. Drizzle the dressing on top, toss again, cover then let it sit in the fridge for a half hour before serving.
