sweet & spicy creamed spinach with veggies

I had a taste for spinach so I came up with this recipe. My husband tried it & loved it. It's our favorite spinach recipe now.

Ingredients

  • 2 tablespoons butter
  • 1 package spinach, fresh
  • 1/2 cup artichoke hearts, canned
  • 1/2 cup cherry tomatoes
  • 1/4 - onion
  • 1/2 cup roasted red peppers
  • 8 ounces cream cheese, low-fat
  • 1/4 cup honey
  • 2 tablespoons dijon mustard
  • 5 cloves garlic
  • 2 teaspoons hot pepper sauce
  • 1/2 teaspoon salt and pepper

How To Make sweet & spicy creamed spinach with veggies

  • Step 1
    Chop artichokes, tomatoes, roasted red bell peppers, & onion. After chopping, put in small bowl & set aside.
  • Step 2
    Melt 2 Tbsp butter & saute spinach & choppeed veggies for 2 minutes. Add cream cheese, honey, dijon mustard, hot pepper sauce, & spices. Cook until cream cheese is melted & veggies are soft, about 8 minutes.
  • Step 3
    Serve alone or as a side to any meat or fish entree.
