I had a taste for spinach so I came up with this recipe. My husband tried it & loved it. It's our favorite spinach recipe now.

  • 2 Tbsp
    butter
  • 1 pkg
    spinach, fresh
  • 1/2 c
    artichoke hearts, canned
  • 1/2 c
    cherry tomatoes
  • 1/4
    onion
  • 1/2 c
    roasted red peppers
  • 8 oz
    cream cheese, low-fat
  • 1/4 c
    honey
  • 2 Tbsp
    dijon mustard
  • 5 clove
    garlic
  • 2 tsp
    hot pepper sauce
  • 1/2 tsp
    salt and pepper

How to Make Sweet & Spicy Creamed Spinach With Veggies

Step-by-Step

  1. Chop artichokes, tomatoes, roasted red bell peppers, & onion. After chopping, put in small bowl & set aside.
  2. Melt 2 Tbsp butter & saute spinach & choppeed veggies for 2 minutes. Add cream cheese, honey, dijon mustard, hot pepper sauce, & spices. Cook until cream cheese is melted & veggies are soft, about 8 minutes.
  3. Serve alone or as a side to any meat or fish entree.
