This is a excellent change from the calorie packed sugar & butter dish everyone seems to make. If you have a larger family, double the recipe.

Add to Grocery List

2 large
sweet potatoes
3 medium
1/2 c
1 Tbsp
olive oil
pepper to taste
orange juice

How to Make Sweet Potato-Carrot Skillet


  • 1Cut sweet potatoes into 3/4" chunks
    Slice carrots into 1/2" pieces
  • 2Put into large skillet with water and olive oil.
    Sprinkle with pepper to taste.
    May also sprinkle with salt (I don't use it)
  • 3Cover skillet. Bring to simmer. Cook for 12 to 15 minutes or until tender. Uncover, cook and stir ocassionally, until water boils away
    Finish off with a splash of orange juice.
