How to Make Sweet Potato-Carrot Skillet
1Cut sweet potatoes into 3/4" chunks
Slice carrots into 1/2" pieces
2Put into large skillet with water and olive oil.
Sprinkle with pepper to taste.
May also sprinkle with salt (I don't use it)
3Cover skillet. Bring to simmer. Cook for 12 to 15 minutes or until tender. Uncover, cook and stir ocassionally, until water boils away
Finish off with a splash of orange juice.
