super summer salad (sallye)

What can I say? It's summertime and the eating is easy (and healthy) This is a salad to use some of those delightful things coming out of your garden. Or from the Farmers Market or grocery if you don't have a garden. You can eat as much of this salad as you can hold and still feel righteous because it is so good for you. NOTE: PREP TIME INCLUDES 2 HOUR MARINATING TIME

Ingredients

  • SALAD VEGGIES
  • 8 ounces cauliflower florets
  • 8 ounces broccoli florets
  • 2 small yellow crooked neck squash
  • 4 small zucchini
  • 1/2 medium cucumber
  • 3 to 5 small green onions
  • 2 medium carrots
  • 8 ounces grape or cherry tomatoes
  • 8 ounces mushroom caps (optional)
  • MARINADE INGREDIENTS
  • 1 cup white rice vinegar
  • 1/2 cup red wine (or red wine vinegar)
  • 1/4 cup lemon juice
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon dried oregano leaves (i use mexican)
  • 1/4 teaspoon anise seed
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon garlic powder (not salt)
  • 2 tablespoons extra virgin olive oil

How To Make super summer salad (sallye)

  • Step 1
    Place all marinade ingredients in a deep bowl and whisk briskly until well blended. Set aside.
  • Step 2
    Break up cauliflower and broccoli florets into bite size pieces and place in large mixing bowl . Slice cucumber, yellow and zucchini squash into thin slices and add to to mixing bowl. Slice onions, including green part, into thin slices and add to mixing bowl. Julienne carrots and add to mixing bowl. You can either slice the mushrooms and tomatoes or add them whole to the mixing bowl. Slicing will allow the marinade to penetrate them better.
  • Step 3
    Pour marinade over vegetables, stirring with wooden spoon to make sure all ingredients are coated. Cover and place in fridge for at least 2 hours before serving (this is an easy dish to make ahead). Stir several times to assure even coating.
  • Step 4
    The beauty of this salad is that you can add and subtract any vegetables that are to your taste. Have a healthful helping.
