summertime essentials: slow cooker corn-on-the-cob

I love good, fresh corn-on-the-cob, to me it is one of the quintessential tastes of Summertime. There are probably about as many ways to cook corn as there are kernels on the cob. Grill, broil, bake, boil, pressure cook, wrapped, unwrapped, in the husk, or out of the husk, with spices or just plain. This method helps to coax out the flavor of the corn by using a slow cooker to start the process, and then giving them an optional roll on a hot grill with spices of choice. Yummy stuff. So, you ready… Let’s get into the kitchen.

Ingredients For summertime essentials: slow cooker corn-on-the-cob

    ears, corn on the cob
  • 3/4 c
    filtered water
  • 2 - 3 Tbsp
    sweet butter, unsalted
  • olive oil
  • salt, kosher variety, to taste
  • black pepper, freshly ground, to taste

    You will need a slow cooker, or Insta Pot (slow cooker setting) to make this recipe.

    Corn on the Cob It goes without saying that the best corn is the freshest you can find. So, the logical place would be one of your local farmer’s markets. Go early, because you do not want to get corn that has been out in the sun all day. Look at the husks, they should be a nice bright green color, not brown, yellow, or dry. The kernels should be bright, plump, and tightly arranged in rows. The silk should be soft, moist, a light golden pale, and slightly sticky. The stems (the part where the corn was broken off at the stalk), if it is still moist, it is fresh; however, if it is beginning to brown, it is probably not the freshest.

    Andy’s Corn-on-the-Cob Fixin’s Bar Set up a small area next to a grill. Populate it with some melted butter and olive oil, and then all kinds of wonderful spices… salt, pepper, paprika, chili, cayenne, oregano, sage... You get the idea. Then allow your guests to butter or oil up the cooked corn, add some spices, and give it a few rolls on the hot grill. I call that corn perfection.

    Gather your ingredients (mise en place).

    Remove the husks and silk from the corn.

    If the stems are long, you can trim those down to the cob.

    Add about 3/4 cup of water to the bowl of your slow cooker, along with the butter. Brush the corn with a bit of olive oil, and then sprinkle with a bit of salt and pepper. Add to the slow cooker.

    I like to cut the cobs in half before adding to the slow cooker.

    Cook on low until the corn is a bright yellow, and tender, about 4 – 5 hours.

    Remove from the slow cooker, add a bamboo skewer to each piece, and tuck in.
