summer vegetable stir fry

I wanted to use the vegetables I had in the fridge before they spoiled and the finished dish was great! My husband said he now likes squash and zucchini! The best part of this is you can vary any amount of any of the vegetables and it will still be good.

Ingredients
- 1 - yellow squash
- 1 - green zucchini
- 1 - green mexican zucchini
- 1/2 - small head cabbage
- 1 - vidalia or yellow onion
- 1 cup diced celery
How To Make summer vegetable stir fry

Step 1Dice up the cabbage, onion, celery and one of the zucchini.

Step 2Slice up the other zucchini and squash.

Step 3Put 1 tablespoon oil in large skillet; saute vegetables for about 10 minutes on medium with lid on, stirring occasionally.

Step 4Add 1/4 cup water and turn to low to steam until all veggies are cooked soft to your liking. Salt, pepper and serve.
