1medium white onion, chopped
2stalks fresh asparagus, bite-size pieces
1-2medium carrots, cleaned and shredded
4-6ears white summer corn, cut from the cob
1 Tbspolive oil
·salt and pepper to taste
1/4 cmilk or heavy cream
·savory or other herbs may be added
How to Make Summer Sunshine
- Heat olive oil and melt butter in a 10-12 inch skillet over medium. When hot, saute' onion 2-3 minutes stirring frequently.
- Add carrots and asparagus; saute' 7-8 minutes. Add corn and stir to blend cooking 4 minutes.
- Add milk or heavy cream. Stir everything together. Season with salt and pepper to your taste. Serve immediately.
