My aunt was not one to waste garden produce. She would often use what she had on hand. This is very good and provide plenty of color! By adding more milk or cream this could easily be made into a summer soup! Yellow corn may be used also, but we really like the white.

Ingredients For summer sunshine

    medium white onion, chopped
  • 2
    stalks fresh asparagus, bite-size pieces
  • 1-2
    medium carrots, cleaned and shredded
  • 4-6
    ears white summer corn, cut from the cob
  • 1 Tbsp
    butter
  • 1 Tbsp
    olive oil
  • salt and pepper to taste
  • 1/4 c
    milk or heavy cream
  • savory or other herbs may be added

How To Make summer sunshine

  • 1
    Heat olive oil and melt butter in a 10-12 inch skillet over medium. When hot, saute' onion 2-3 minutes stirring frequently.

    Add carrots and asparagus; saute' 7-8 minutes. Add corn and stir to blend cooking 4 minutes.

    Add milk or heavy cream. Stir everything together. Season with salt and pepper to your taste. Serve immediately.
