Summer is the best time of year for fresh veggies and fruit. So I thought I would post one of my summer salad recipes. It is a very simple summer salad; without tomatoes because my daughter refuses to eat them, but I love making it with tomatoes too. The secret is in the vinigars, and of course the flavors get better the longer you allow it to marinate. I hope you give it a try

Ingredients
- 1-2 large cucumber
- 1 medium sweet red onion...the flatter the sweeter
- 1 tablespoon evoo
- 3 tablespoons orange muscat champagne vinegar...this can be purchased at trader joes
- 2 tablespoons balsamic vinegar
- 3 tablespoons water
- 1/2 - 3/4 packages good seasons italian dressing
How To Make summer salad

Step 1Peel and cut cucumber into thick slices

Step 2Peel and cut red onion into chuncks. matching the size of the cucumbers

Step 3Add the remaining ingredients, and toss.

Step 4Cover, and refridgerate at least 30 mins.
