Summer is the best time of year for fresh veggies and fruit. So I thought I would post one of my summer salad recipes. It is a very simple summer salad; without tomatoes because my daughter refuses to eat them, but I love making it with tomatoes too. The secret is in the vinigars, and of course the flavors get better the longer you allow it to marinate. I hope you give it a try

Ingredients

  • 1-2 large cucumber
  • 1 medium sweet red onion...the flatter the sweeter
  • 1 tablespoon evoo
  • 3 tablespoons orange muscat champagne vinegar...this can be purchased at trader joes
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons water
  • 1/2 - 3/4 packages good seasons italian dressing

How To Make summer salad

  • Step 1
    Peel and cut cucumber into thick slices
  • Step 2
    Peel and cut red onion into chuncks. matching the size of the cucumbers
  • Step 3
    Add the remaining ingredients, and toss.
  • Step 4
    Cover, and refridgerate at least 30 mins.
