Veggie Revival - Succotash was seen on our table coming up when I was a child. There were 7 mouths to feed and the ingredients for Succotash was inexpensive and more readily available. This is a blast from the past for me revived into a Creamy Succotash full of flavor. Enjoy

Ingredients
- 1 1/2 cups vegetable broth ( low - sodium)
- 12 ounces package frozen corn
- 14 ounces package frozen lima beans
- 3 cloves garlic (minced)
- 1 medium red bell pepper (diced)
- 1/4 cup instant mash potato mix (used for thickening) or you can use corned starch.
- 1 1/2 cups gouda cheese (shredded)
How To Make succotash in a flash

Step 1In medium size sauce pan over medium - high heat, add vegetable broth, corn, lima beans, and garlic, let simmer for about 8 - 10 minutes or until veggies are tender.

Step 2Then add red bell peppers and blend well. Salt and pepper to taste, now add instant mash potato mix for desired thickness. Let simmer for about 3 minutes then add gouda cheese.

Step 3Garnish Succotash with scallions and serve with your favorite main course.
