Succotash in a Flash
1 1/2 cvegetable broth ( low - sodium)
12 ozpackage frozen corn
14 ozpackage frozen lima beans
3 clovegarlic (minced)
1 mediumred bell pepper (diced)
1/4 cinstant mash potato mix (used for thickening) or you can use corned starch.
1 1/2 cgouda cheese (shredded)
How to Make Succotash in a Flash
- In medium size sauce pan over medium - high heat, add vegetable broth, corn, lima beans, and garlic, let simmer for about 8 - 10 minutes or until veggies are tender.
- Then add red bell peppers and blend well. Salt and pepper to taste, now add instant mash potato mix for desired thickness. Let simmer for about 3 minutes then add gouda cheese.
