I like to make this when I'm in a hurry. And I usually have all of these vegetables on hand, so it's a no brainer. The ginger gives this vegetable dish a unique flavor.

Ingredients For succotash

  • olive oil
  • 1 sm
    onion, minced
  • 1/2 tsp
    garlic powder, or 1 clove garlic, minced
  • 1 sm
    red bell pepper, or green pepper if red are not in season
  • salt and pepper to taste
  • 1/4 tsp
    ground ginger
  • 10 oz
    pkg. frozen corn
  • 10 oz
    pkg. frozen lima beans
  • 10 oz
    pkg. frozen green beans

How To Make succotash

  • 1
    In a saucepan, pour about 2 teaspoons of olive oil, and sauté 1 small minced onion, the garlic powder or minced garlic, 1 minced red bell pepper (or green pepper) and the salt and pepper to taste, covered, over low heat until the onion becomes soft.

    Add 1/4 teaspoon ground ginger, the frozen corn, the frozen lima beans, and green beans.

    Add about 2 cups water, and simmer, covered for about 10 minutes.

    Remove lid and simmer for a few more minutes or until most of the liquid is evaporated.
