I like to make this when I'm in a hurry. And I usually have all of these vegetables on hand, so it's a no brainer. The ginger gives this vegetable dish a unique flavor.

Ingredients
- - olive oil
- 1 small onion, minced
- 1/2 teaspoon garlic powder, or 1 clove garlic, minced
- 1 small red bell pepper, or green pepper if red are not in season
- - salt and pepper to taste
- 1/4 teaspoon ground ginger
- 10 ounces pkg. frozen corn
- 10 ounces pkg. frozen lima beans
- 10 ounces pkg. frozen green beans
How To Make succotash

Step 1In a saucepan, pour about 2 teaspoons of olive oil, and sauté 1 small minced onion, the garlic powder or minced garlic, 1 minced red bell pepper (or green pepper) and the salt and pepper to taste, covered, over low heat until the onion becomes soft.

Step 2Add 1/4 teaspoon ground ginger, the frozen corn, the frozen lima beans, and green beans.

Step 3Add about 2 cups water, and simmer, covered for about 10 minutes.

Step 4Remove lid and simmer for a few more minutes or until most of the liquid is evaporated.
