1 smallonion, minced
1/2 tspgarlic powder, or 1 clove garlic, minced
1 smallred bell pepper, or green pepper if red are not in season
·salt and pepper to taste
1/4 tspground ginger
10 ozpkg. frozen corn
10 ozpkg. frozen lima beans
10 ozpkg. frozen green beans
How to Make Succotash
- In a saucepan, pour about 2 teaspoons of olive oil, and sauté 1 small minced onion, the garlic powder or minced garlic, 1 minced red bell pepper (or green pepper) and the salt and pepper to taste, covered, over low heat until the onion becomes soft.
- Add 1/4 teaspoon ground ginger, the frozen corn, the frozen lima beans, and green beans.
- Add about 2 cups water, and simmer, covered for about 10 minutes.
- Remove lid and simmer for a few more minutes or until most of the liquid is evaporated.
