This is a quick and tasty recipe for a Tuscan bread salad.

Ingredients

  • 2 pints whole grape tomatoes
  • 1 medium cucumber
  • 1 small red onion
  • 1 small yellow bell pepper
  • 6 ounces can large pitted ripe olives, drained
  • 1/4 cup balsamic vinegar
  • 1 teaspoon ground basil
  • 2 cloves minced garlic
  • 2 tablespoons extra virgin olive oil
  • 1 small bag or box of bread stuffing(the cubed kind no seasoning -not stove top type
  • 1/2 cup grated,ricotta salata or crumbled feta cheese, optional

How To Make stuffing bread salad

  • Step 1
    Wash and place tomatoes in a large bowl. Cut cucumbers lengthwise in half; scoop out seeds. Cut cucumber, pepper and onion in bite size pieces; place in bowl with tomatoes.. Stir in olives, vinegar, oil, basil, and garlic. Add the crusty stuffing cubes to vegetable mixture; toss gently to coat with dressing. Sprinkle with cheese, if desired. --- Note: Ricotta salata is a firm, pungent cheese suitable for grating. If unavailable, feta cheese may be substituted.
