1Wash and place tomatoes in a large bowl. Cut cucumbers lengthwise in half; scoop out seeds. Cut cucumber, pepper and onion in bite size pieces; place in bowl with tomatoes.. Stir in olives, vinegar, oil, basil, and garlic. Add the crusty stuffing cubes to vegetable mixture; toss gently to coat with dressing. Sprinkle with cheese, if desired.
Ricotta salata is a firm, pungent cheese suitable for grating. If unavailable, feta cheese may be substituted.
