stuffed zucchini
My family has never been much for Zucchini until I came up this recipe. It is very unique and you won't find it anywhere else, since it is my original. Enjoy

Ingredients
- 1 medium sweet onion
- 3 medium carrots
- 4 medium zucchini
- 1/2 cup shredded parmesan
- 2 cups bread stuffing mix
- 1 - egg
- 1/2 teaspoon tarragon, dried (you can add more but not too much, is not optional)
- 1 teaspoon garlic salt
- 2 teaspoons montreal steak seasonings
How To Make stuffed zucchini

Step 1Wash your zucchini and cut in half. Scoop out the middle leaving about 1/4 inch around the edges. See photograph.

Step 2Rub with olive oil and sprinkle Montreal Steak Seasoning inside and out.

Step 3Mix together carrots, onions and the middle parts of the zucchini.

Step 4Add stuffing, cheese, egg and spices.

Step 5Stuff the boats and bake in 400 degree oven for about 15 to 20 minutes. They should be a little toasty on top.

Step 6These are a great vegetarian meal. Enjoy!
