My family has never been much for Zucchini until I came up this recipe.

It is very unique and you won't find it anywhere else, since it is my original.

1 medium
sweet onion
3 medium
4 medium
1/2 c
shredded parmesan
2 c
bread stuffing mix
1/2 tsp
tarragon, dried (you can add more but not too much, is not optional)
1 tsp
garlic salt
2 tsp
montreal steak seasonings

How to Make Stuffed Zucchini


  • 1Wash your zucchini and cut in half. Scoop out the middle leaving about 1/4 inch around the edges. See photograph.
  • 2Rub with olive oil and sprinkle Montreal Steak Seasoning inside and out.
  • 3Mix together carrots, onions and the middle parts of the zucchini.
  • 4Add stuffing, cheese, egg and spices.
  • 5Stuff the boats and bake in 400 degree oven for about 15 to 20 minutes. They should be a little toasty on top.
  • 6These are a great vegetarian meal. Enjoy!
