My family has never been much for Zucchini until I came up this recipe. It is very unique and you won't find it anywhere else, since it is my original. Enjoy

Ingredients

  • 1 medium sweet onion
  • 3 medium carrots
  • 4 medium zucchini
  • 1/2 cup shredded parmesan
  • 2 cups bread stuffing mix
  • 1 - egg
  • 1/2 teaspoon tarragon, dried (you can add more but not too much, is not optional)
  • 1 teaspoon garlic salt
  • 2 teaspoons montreal steak seasonings

How To Make stuffed zucchini

  • Step 1
    Wash your zucchini and cut in half. Scoop out the middle leaving about 1/4 inch around the edges. See photograph.
  • Step 2
    Rub with olive oil and sprinkle Montreal Steak Seasoning inside and out.
  • Step 3
    Mix together carrots, onions and the middle parts of the zucchini.
  • Step 4
    Add stuffing, cheese, egg and spices.
  • Step 5
    Stuff the boats and bake in 400 degree oven for about 15 to 20 minutes. They should be a little toasty on top.
  • Step 6
    These are a great vegetarian meal. Enjoy!
