Ingredients

  • 1 medium
    yellow squash
  • 3/4 c
    cornbread, leftover, crumbled fine
  • 1 Tbsp
    onion flakes, dehydrated
  • 1 large
    egg
  • 1/2 tsp
    poultry seasoning
  • 1 Tbsp
    parmigiano-reggiano, grated
  • 1 tsp
    parsley flakes
  • 1 Tbsp
    olive oil, extra virgin

How to Make Stuffed Yellow Squash

Step-by-Step

  1. wash and cut ends from squash. cut in half length wise. scoop out seeds/pulp with a spoon and discard seeds/pulp.
  2. heat oven to 425 degrees.
  3. mix cornbread, cheese, egg, parsley, seasoning, onion, and oil in a small bowl.
  4. spoon 1/2 of the bread mix into cavity of each half of the squash.
  5. place on baking sheet and bake 20- 30 min till squash ends are soft and stuffing is golden brown.
