Ingredients

  • 1 medium yellow squash
  • 3/4 cup cornbread, leftover, crumbled fine
  • 1 tablespoon onion flakes, dehydrated
  • 1 large egg
  • 1/2 teaspoon poultry seasoning
  • 1 tablespoon parmigiano-reggiano, grated
  • 1 teaspoon parsley flakes
  • 1 tablespoon olive oil, extra virgin

How To Make stuffed yellow squash

  • Step 1
    wash and cut ends from squash. cut in half length wise. scoop out seeds/pulp with a spoon and discard seeds/pulp.
  • Step 2
    heat oven to 425 degrees.
  • Step 3
    mix cornbread, cheese, egg, parsley, seasoning, onion, and oil in a small bowl.
  • Step 4
    spoon 1/2 of the bread mix into cavity of each half of the squash.
  • Step 5
    place on baking sheet and bake 20- 30 min till squash ends are soft and stuffing is golden brown.
