1Lightly spray medium size fry pan with cooking spray. Add olive oil to pan on medium-low heat. Add sliced zucchini and cook until translucent, about 10 minutes, stirring frequently to break the zucchini into pieces.
2In medium bowl, whisk eggs, milk, and sugar until well blended.
3Add to zucchini and salt and pepper to taste. Stir until the eggs are scrambled.
