3 or4medium yellow squash, cut in 1/2 inch rounds
1/4 ccup heaping ,shredded parmesan cheese
1/4 cheaping, panko bread crumbs
1/4 tspkosher salt
2 tspolive oil
·freshly ground pepper to taste
PREHEAT OVEN TO 400
How to Make Squash chips
- Coat squash slices with olive oil.
- In a bowl, combine Parmesan cheese, panko bread crumbs, salt and pepper.
- Add squash slices to cheese mixture, I did it one by one, then placed on a Pam sprayed foil lined cookie sheet. Top slices with remaining cheese. Bake 30 minutes, no need to turn, they crisp up on both sides by themselves.
