My husband ate most of these by himself, he LOVED them! You can make them with yellow squash or zucchini .

Ingredients
- 3 or4 - medium yellow squash, cut in 1/2 inch rounds
- 1/4 cup cup heaping ,shredded parmesan cheese
- 1/4 cup heaping, panko bread crumbs
- 1/4 teaspoon kosher salt
- 2 teaspoons olive oil
- - freshly ground pepper to taste
- PREHEAT OVEN TO 400
How To Make squash chips

Step 1Coat squash slices with olive oil.

Step 2In a bowl, combine Parmesan cheese, panko bread crumbs, salt and pepper.

Step 3Add squash slices to cheese mixture, I did it one by one, then placed on a Pam sprayed foil lined cookie sheet. Top slices with remaining cheese. Bake 30 minutes, no need to turn, they crisp up on both sides by themselves.
