My husband ate most of these by himself, he LOVED them! You can make them with yellow squash or zucchini .

medium yellow squash, cut in 1/2 inch rounds
cup heaping ,shredded parmesan cheese
heaping, panko bread crumbs
freshly ground pepper to taste
PREHEAT OVEN TO 400
How To Make
Coat squash slices with olive oil.
In a bowl, combine Parmesan cheese, panko bread crumbs, salt and pepper.
Add squash slices to cheese mixture, I did it one by one, then placed on a Pam sprayed foil lined cookie sheet. Top slices with remaining cheese. Bake 30 minutes, no need to turn, they crisp up on both sides by themselves.
