I came up with this one afternoon when I was hungry and decided I wanted a salad. I scrounged around my fridge and cabinets and threw it together. My mom and grandma really love it. Serving Suggestions: With grilled or rotisserie chicken With turkey With ham With pork chops As a snack I often use this as a side dish. Such as with pan seared lightly seasoned boneless skinless chicken breasts and basmati rice.

Ingredients

  • 1 package baby spinach leaf
  • 1 package fresh mozzarella cheese
  • 1 package grape
  • 1 package oven roasted sliced almonds (honey is good or just plain)
  • 1 - clementine orange, peeled and sectioned
  • 1 package fresh strawberries
  • 1 bottle cranberry balsamic vinaigrette

How To Make spring garden salad

  • Step 1
    Portion out desired amount of baby spinach leaf salad.
  • Step 2
    Slice 4 - 6 grape tomatoes in half.
  • Step 3
    Finely slice 3 - 6 strawberries.
  • Step 4
    Cut 3 - 4, 1 inch thick slices of mozzarella then cube.
  • Step 5
    Toss salad with tomatoes, strawberries, orange sections, cheese and almonds.
  • Step 6
    Top with desired amount of vinaigrette and enjoy.
