I came up with this one afternoon when I was hungry and decided I wanted a salad. I scrounged around my fridge and cabinets and threw it together. My mom and grandma really love it.

Serving Suggestions:

With grilled or rotisserie chicken
With turkey
With ham
With pork chops
As a snack

I often use this as a side dish. Such as with pan seared lightly seasoned boneless skinless chicken breasts and basmati rice.

  • 1 pkg
    baby spinach leaf
  • 1 pkg
    fresh mozzarella cheese
  • 1 pkg
  • 1 pkg
    oven roasted sliced almonds (honey is good or just plain)
  • 1
    clementine orange, peeled and sectioned
  • 1 pkg
    fresh strawberries
  • 1 bottle
    cranberry balsamic vinaigrette

How to Make Spring Garden Salad


  1. Portion out desired amount of baby spinach leaf salad.
  2. Slice 4 - 6 grape tomatoes in half.
  3. Finely slice 3 - 6 strawberries.
  4. Cut 3 - 4, 1 inch thick slices of mozzarella then cube.
  5. Toss salad with tomatoes, strawberries, orange sections, cheese and almonds.
  6. Top with desired amount of vinaigrette and enjoy.
