spiralized carrots & squash with ro-tel tomatoes
I am hooked on Spiralized Veggies! I first tried the squash, which I bought from - our produce and garden store; then I went back and got some carrots and sweet potatoes. I haven't made anything with the sweet potatoes yet. But love these healthy & delicious veggies. The Ro-tel tomatoes & green chilies give it a nice kick and makes a yummy dish. My friend tried this & bought herself a spiralizer. She & her husband loved them as much as I do. I'd rather buy them already spiralized, so I don't have to spend the money on a spiralizer -and it is quicker just to pick them up & quickly saute them

Ingredients
- 1 tablespoon olive oil
- 3 cups spiralized yellow squash
- 2 cups spiralized carrots
- 1/4 cup diced onions
- 1 can 10 oz ro-tel tomatoes & green chilies.
- - s&p to taste
- THE RO-TEL TOMATOES & GREEN CHILIES COME IN MILD, ORIGINAL, FIRE ROASTED AND MEXICAN (WITH LIME & CILANTRO). I USED THE ORIGINAL. YOU CAN HAVE IT AS MILD OR HOT AS YOU LIKE.
How To Make spiralized carrots & squash with ro-tel tomatoes

Step 1Heat the Olive oil in a 10 - 12 inch saute pan

Step 2Add the onions and saute about 2 minutes.

Step 3Add the squash carrots and saute for about 8-10 additional minutes.

Step 4Mix the vegetables well; and saute until crisp tender.

Step 5When done; but not wilted; and are still a little crisp; add the can of Ro-tel tomatoes with green chilies.I use the Original. This gives it a little kick. If you want a little more "heat," you can use a can with the hotter green chilies.

Step 6Mix well, and cook until nice and hot. Enjoy!

Step 7NOTE: You can half or double the recipe. This makes a great side dish, along with other vegetables or your choice of meat. I had it with fresh corn on the cob and sliced tomatoes (fresh from Florida). Yum!!
