spinach, fresh, chopped
eggs, lightly beaten
1 c
potatoes, shredded
1 c
swiss cheese, shredded
1/4 c
onion, shredded
1/4 c
heavy cream
salt/pepper to taste

How to Make Spinach/Swiss Medallions


  • 1In a large bowl combine all the ingredients
  • 2spray 2 cupcake pans with oil= 12 individual medallions
  • 3cover and bake for 30 mins at 350 degrees, uncover and bake another 5 minutes or until golden brown and bubbly.
  • 4let cool and serve as a side, snack or breakfast.
