  • 2 c
    spinach, fresh, chopped
  • 2
    eggs, lightly beaten
  • 1 c
    potatoes, shredded
  • 1 c
    swiss cheese, shredded
  • 1/4 c
    onion, shredded
  • 1/4 c
    heavy cream
  • ·
    salt/pepper to taste

How to Make Spinach/Swiss Medallions

Step-by-Step

  1. In a large bowl combine all the ingredients
  2. spray 2 cupcake pans with oil= 12 individual medallions
  3. cover and bake for 30 mins at 350 degrees, uncover and bake another 5 minutes or until golden brown and bubbly.
  4. let cool and serve as a side, snack or breakfast.
