Ingredients

  • 2 cups spinach, fresh, chopped
  • 2 - eggs, lightly beaten
  • 1 cup potatoes, shredded
  • 1 cup swiss cheese, shredded
  • 1/4 cup onion, shredded
  • 1/4 cup heavy cream
  • - salt/pepper to taste

How To Make spinach/swiss medallions

  • Step 1
    In a large bowl combine all the ingredients
  • Step 2
    spray 2 cupcake pans with oil= 12 individual medallions
  • Step 3
    cover and bake for 30 mins at 350 degrees, uncover and bake another 5 minutes or until golden brown and bubbly.
  • Step 4
    let cool and serve as a side, snack or breakfast.
