- 1 cup potatoes, shredded
- 1 cup swiss cheese, shredded
- 1/4 cup onion, shredded
- 1/4 cup heavy cream
- - salt/pepper to taste
How To Make spinach/swiss medallions

Step 1In a large bowl combine all the ingredients

Step 2spray 2 cupcake pans with oil= 12 individual medallions

Step 3cover and bake for 30 mins at 350 degrees, uncover and bake another 5 minutes or until golden brown and bubbly.

Step 4let cool and serve as a side, snack or breakfast.
