A lovely Ethiopian vegetarian dish to serve with injera bread. Feel free to add berbere or a little spice to give it a kick.

Ingredients

  • 1 bunch spinach, tough stems removed and chopped
  • 1 cup ayib - ethiopian cheese (cottage type cheese can be substituted)
  • 1 tablespoon nite kebbeh
  • 1 - onion, chopped
  • 1 teaspoon ginger, grated
  • 2 cloves garlic,minced
  • - salt and pepper to taste

How To Make spinach and cheese saute ethiopian-style

  • Step 1
    Melt the niter kibbeh in a large skillet and add onions, ginger and garlic. Saute until translucent.
  • Step 2
    Add the chopped spinach and stir until it wilts. Then add the cheese, salt, and pepper and cook until slightly dry.
  • Step 3
    Serve hot with injera.
