Ingredients
- 1 bunch spinach, tough stems removed and chopped
- 1 cup ayib - ethiopian cheese (cottage type cheese can be substituted)
- 1 tablespoon nite kebbeh
- 1 - onion, chopped
- 1 teaspoon ginger, grated
- 2 cloves garlic,minced
- - salt and pepper to taste
How To Make spinach and cheese saute ethiopian-style

Step 1Melt the niter kibbeh in a large skillet and add onions, ginger and garlic. Saute until translucent.

Step 2Add the chopped spinach and stir until it wilts. Then add the cheese, salt, and pepper and cook until slightly dry.

Step 3Serve hot with injera.
