Ingredients
- 4 cups okra, trimmed and split lengthwise (seeded if necessary)
- 1/4 cup vegetable oil
- 1 1/2 cups red onion, minced
- 2 cups tomatoes, peeled, seeded and chopped (canned tomatoes will work)
- 2 teaspoons fresh garlic, minced
- 2 teaspoons fresh ginger, minced
- 1/2 teaspoon ground cardamom
- 2 - jalapenos, seeded and minced (or pepper of your choice)
How To Make spicy okra

Step 1In a medium saucepan, heat oil. Cook onions until lightly browned.

Step 2Add tomatoes and bring to a boil.

Step 3Lower heat and stir in garlic, ginger, and cardamom. Add the okra and cooked, uncovered, for 20 minutes (or to taste). Add chilies and cook 5 additional minutes.
