Ingredients
- 2 medium cucumbers
- 1 tablespoon sugar
- 2 tablespoons white vinegar
- 2 - bird chlies, fresh, minced (substitute 1 serrano)
- 3-4 ounces peanuts, roasted, crushed
- 3 - shallots, sliced
- 1/2 cup cilantro, rough chopped
- 1 teaspoon fish sauce
How To Make spicy cucumber salad

Step 1Peel cucumbers, slice in half lengthways and remove seeds with a spoon.

Step 2Slice into 1/2 inch slices.

Step 3Dissolve sugar in vinegar and toss cucumber in the mixture.

Step 4Mix well with minced chilli, crushed peanuts, shallots, fish sauce and cilantro leaves.

Step 5Marinate for 1 hour before serving.
