Ingredients
- 2 tablespoons butter
- 1 large onion, chopped
- 2 - green bell peppers, chopped
- 1/4 cup flour
- 2 cups fresh or frozen corn
- 2 cups cooked long grain brown rice
- 1 can (14 1/2 ounce) low sodium diced tomatoes with liquid
- 2 - hard boiled eggs, chopped
- 2 1/2 cups shredded low fat sharp cheddar cheese
- 2 tablespoons worcestershire sauce
- 2 teaspoons hot pepper sauce (or more to taste)
- 1/2 teaspoon each salt and pepper
How To Make spicy corn casserole (for the crock pot)

Step 1In a large medium melt butter and then saute onion and bell pepper until tender. Stir in flour and when mixed remove from heat. Place this and all ingredients in crockpot. Mix. Cover and cook on low for 2-3 hours. Check on casserole while cooking and add tomato juice to your liking if corn begins to become too dry.
