I love pickled beets, but don't always have time to roast the beets first. So I came up w/ this easy recipe. They are very yummy.

Ingredients
- 1/4 cup sugar
- 1 tablespoon cornstarch
- 1/2 teaspoon salt
- 1/4 cup white vinegar
- 1/4 cup water
- 2 - 15 oz cans or jars sliced beets, drained well.
- 1 tablespoon onion, diced
- 1 tablespoon butter
How To Make so easy pickled beets

Step 1In medium saucepan, combine sugar, cornstarch, salt, vinegar and water, place over medium heat. Stir until smooth.

Step 2Bring to a boil, stirring, until thickened. Add beets and onion. Simmer on low 10 mins. Add butter, stir until melted.

Step 3Let cool. Pour into a lg jar or bowl. Refrigerate until serving.
