smothered zucchini and onions

This recipe reminds me of smother potatoes and tastes like it too. We like it as a quick summer side dish and the kids enjoy it.

Ingredients For smothered zucchini and onions

  • 1 Large slice
    onion
  • 2 Large slice
    zucchini
  • 3 clove
    garlic
  • 4 Tbsp
    unsalted real butter
  • 1/4 c
    olive oil
  • Several pinch
    mrs. dash garlic & herb seasoning mix
  • 1/4 c
    low sodium chicken broth

How To Make smothered zucchini and onions

    I like to use my wok or a big skillet for this recipe.

    Slice the zucchini and onion into coins. Mince the garlic then toss everything together with a little olive oil and season with pepper and Mrs. Dash Garlic and Herb seasoning mix.

    Add olive oil and butter to saute pan, when melted saute vegetables over medium to high heat until they are brown. Add chicken broth and cover until your desired tenderness.
