I just love red potatos smashed. Heres a low carb method useing cauliflower. Ive been having fun useing cauliflower in place of potatos and other starches.

Ingredients

  • 1 - head cauliflower
  • 1/4 cup monteryjack cheese or favorite cheese
  • - dried parsley

How To Make smash cauliflower buttons

  • Step 1
    Preheat oven to 400. Break cauliflower into florets. Spray baking sheet with cooking spray and lay out florets, s&p. Bake for 20-25 min.
  • Step 2
    Take cauliflower off baking sheet and smash each floret, Back on baking sheet. Place shredded cheese on each floret, sprinkle with parsley.
  • Step 3
    Place baking sheet back into 425 oven for 10-12 min. till cheese nice and bubbly. Serve with favorite protein, for a healthy low carb dinner. Feel free to change up with different cheeses and spices.
