Sounds funky, but quite the fun way to serve a fresh vegetable platter full of colorful vegetables from the garden....enjoy the bounty of color & flavor!! xoxo V

Ingredients

  • 1 medium red bell pepper sliced thin
  • 1 medium orange bell pepper sliced thin
  • 1 medium yellow bell pepper sliced thin
  • 1 small red onion sliced very thin in circles
  • 1 medium yellow squash sliced thin in circles
  • 1 medium zucchini sliced thin in circles
  • 3 tablespoons butter
  • 1 small clove garlic minced
  • 2 tablespoons chicken broth paste from jar
  • 2 tablespoons freshly chopped oregano
  • 1/2 cup parmesan cheese
  • 1 cup shredded mozarrela cheese
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste

How To Make skillet fresh italian vegetable medley

  • Step 1
    Wash & slice all vegetables. Melt butter in large skillet on medium heat.
  • Step 2
    Add peppers & garlic first on medium heat & stir 3 mins. before rest of vegetables, add remaining vegetables along with chicken broth, (I use paste because water from vegetables becomes a lot after cooking down) add seasonings.(Not cheeses) Stir occasionally, approx. 5-7 mins. depending on how "el dente" you like your veggies.
  • Step 3
    Sprinkle mozzarella evenly over top of vegetable medley then add parmesan cheese over entire skillet and cover just to melt cheese on low heat.
  • Step 4
    Slide medley onto beautiful fun serving tray and add sprigs of any oregano or fresh parsley you may have in fridge...Voila!!!& Serve!!
