Simply Good Relish Salad
I like the spiciness the jalapeno adds, but if you don't then just leave it out. Sometimes I will substitute chopped red onion for the radish.

1/2 ctomato, chopped
1/2 cred bell pepper, chopped
1/2 cgreen bell pepper, chopped
1 smalljalapeno pepper, seeded and finely minced (optional)
1/2 cradishes, thinly sliced (or chopped red onion)
1/2 ccucumber, pared and chopped
1 and 1/2 Tbsplemon juice
3 tspolive oil
·salt and pepper to taste
2 Tbspchopped fresh parsley
How to Make Simply Good Relish Salad
- In bowl, combine all vegetables. In separate bowl combine lemon juice, oil, salt and pepper.
- Pour oil mixture over vegetables and toss to coat. Cover and refrigerate several hours so flavors can blend. Toss again before serving and sprinkle with the chopped parsley.
