simply good relish salad
I have made this relish salad for many years. It is tasty and very versatile - it can be used as a side dish, as a relish along side plain meats, I have even added it to tacos! I like the spiciness the jalapeno adds, but if you don't then just leave it out. Sometimes I will substitute chopped red onion for the radish. I hope you like it, too!

Ingredients
- 1/2 cup tomato, chopped
- 1/2 cup red bell pepper, chopped
- 1/2 cup green bell pepper, chopped
- 1 small jalapeno pepper, seeded and finely minced (optional)
- 1/2 cup radishes, thinly sliced (or chopped red onion)
- 1/2 cup cucumber, pared and chopped
- 1 and 1/2 tablespoons lemon juice
- 3 teaspoons olive oil
- - salt and pepper to taste
- 2 tablespoons chopped fresh parsley
How To Make simply good relish salad

Step 1In bowl, combine all vegetables. In separate bowl combine lemon juice, oil, salt and pepper.

Step 2Pour oil mixture over vegetables and toss to coat. Cover and refrigerate several hours so flavors can blend. Toss again before serving and sprinkle with the chopped parsley.
