I have made this relish salad for many years. It is tasty and very versatile - it can be used as a side dish, as a relish along side plain meats, I have even added it to tacos!

I like the spiciness the jalapeno adds, but if you don't then just leave it out. Sometimes I will substitute chopped red onion for the radish.

Ingredients

  • 1/2 c
    tomato, chopped
  • 1/2 c
    red bell pepper, chopped
  • 1/2 c
    green bell pepper, chopped
  • 1 small
    jalapeno pepper, seeded and finely minced (optional)
  • 1/2 c
    radishes, thinly sliced (or chopped red onion)
  • 1/2 c
    cucumber, pared and chopped
  • 1 and 1/2 Tbsp
    lemon juice
  • 3 tsp
    olive oil
  • ·
    salt and pepper to taste
  • 2 Tbsp
    chopped fresh parsley

How to Make Simply Good Relish Salad

Step-by-Step

  1. In bowl, combine all vegetables. In separate bowl combine lemon juice, oil, salt and pepper.
  2. Pour oil mixture over vegetables and toss to coat. Cover and refrigerate several hours so flavors can blend. Toss again before serving and sprinkle with the chopped parsley.
