simply good relish salad

I have made this relish salad for many years. It is tasty and very versatile - it can be used as a side dish, as a relish along side plain meats, I have even added it to tacos! I like the spiciness the jalapeno adds, but if you don't then just leave it out. Sometimes I will substitute chopped red onion for the radish. I hope you like it, too!

Ingredients

  • 1/2 cup tomato, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup green bell pepper, chopped
  • 1 small jalapeno pepper, seeded and finely minced (optional)
  • 1/2 cup radishes, thinly sliced (or chopped red onion)
  • 1/2 cup cucumber, pared and chopped
  • 1 and 1/2 tablespoons lemon juice
  • 3 teaspoons olive oil
  • - salt and pepper to taste
  • 2 tablespoons chopped fresh parsley

How To Make simply good relish salad

  • Step 1
    In bowl, combine all vegetables. In separate bowl combine lemon juice, oil, salt and pepper.
  • Step 2
    Pour oil mixture over vegetables and toss to coat. Cover and refrigerate several hours so flavors can blend. Toss again before serving and sprinkle with the chopped parsley.
