simple black beans & rice

This quick and easy dish comes from Kroger's website, and I have tweaked it a bit. I'm crazy about any kind of beans with rice. This will be a welcome change to my menus. Photo: Kroger.com

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 cups water
  • 1 1/2 cups instant rice
  • 1 can (15 oz.) diced tomatoes
  • 1 can (15 oz.) black beans, drained and rinsed

How To Make simple black beans & rice

  • Step 1
    Heat oil in a medium saucepan over medium heat. Add onion and garlic; cook and stir 2 minutes. Add water and rice. Bring to a boil. Reduce heat to low; cover and simmer till rice is tender, about 10 to 15 minutes.
  • Step 2
    Stir in tomatoes and beans. Cook until heated through.
