Silver Queen Corn usually is available mid to late summer. It is especially sweet and delicious. If you don't have a food processor, when you are cutting the corn off the cob do it in 2 layers...more work, but creates the same chop of corn. The one hour of draining time is not included in prep time.

Ingredients

  • 3 cups fresh cut silver queen corn (about 3 ears, maybe 4)
  • 3 cups whipping cream
  • 6 large eggs, beaten
  • 1/2 cup sugar
  • 1 teaspoon all-purpose flour
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons butter, melted

How To Make silver queen corn pudding

  • Step 1
    Position the knife blade in a food processor bowl; add corn. Pulse until finely chopped. Place in a colander. Drain for 1 hour.
  • Step 2
    Combine the corn and the remaining ingredients; stir well. Pour the corn mixture into an ungreased 2 quart casserole.
  • Step 3
    Bake, uncovered, at 325 degrees F for 1 hour and 45 minutes or until set. Let stand for 10 minutes before serving.
