side essentials: cheesy creamed spinach
This is a take on the usual creamed spinach dishes; except I made it really cheesy. Feel free to use fresh spinach; as opposed to frozen, and play about with any other spices that make you happy. This is easy to put together, and would be a prefect side for your holiday table. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 slices uncured bacon, diced
- 3 tablespoons yellow onion, diced
- 1 clove garlic, minced
- 6 ounces cream cheese, softened
- 1/2 cup parmesan cheese, freshly grated
- 2 ounces mozzarella cheese, freshly grated
- 2 tablespoons heavy cream
- 1 pinch white pepper, freshly ground, or to taste
- 1 pinch ground nutmeg
- 1 pinch cayenne pepper
- 12 ounces spinach, frozen, chopped, and defrosted

Step 2Gather your Ingredients (mise en place),

Step 3Add the bacon to a saucepan over medium heat.

Step 4Chef’s Note: The saucepan needs to be big enough to hold all the ingredients.

Step 5Cook until the bacon softens, and begins to render its fat, about 5 – 6 minutes.

Step 6Add the onions, and cook until they soften, about 2 – 3 minutes.

Step 7Add the garlic, and cook until fragrant, about 60 seconds.

Step 8Reduce the heat to low, and add the heavy cream, the mozzarella, parmesan, and cream cheeses.

Step 9Stir until incorporated, and fully melted, about 3 – 4 minutes.

Step 10Chef’s Note: While the sauce is cooking, season to taste with the recommended spices, or be creative.

Step 11Chef’s Tip: If the sauce seems a bit thick, add a bit of heavy cream, a teaspoon at a time, until you achieve the desired consistency.

Step 12Add the defrosted spinach, and stir to incorporate, and warm through, about 5 – 7 minutes.
