This is a take on the usual creamed spinach dishes; except I made it really cheesy. Feel free to use fresh spinach; as opposed to frozen, and play about with any other spices that make you happy. This is easy to put together, and would be a prefect side for your holiday table. So, you ready… Let’s get into the kitchen.

Ingredients For side essentials: cheesy creamed spinach

  • PLAN/PURCHASE
  • 2 slice
    uncured bacon, diced
  • 3 Tbsp
    yellow onion, diced
  • 1 clove
    garlic, minced
  • 6 oz
    cream cheese, softened
  • 1/2 c
    parmesan cheese, freshly grated
  • 2 oz
    mozzarella cheese, freshly grated
  • 2 Tbsp
    heavy cream
  • 1 pinch
    white pepper, freshly ground, or to taste
  • 1 pinch
    ground nutmeg
  • 1 pinch
    cayenne pepper
  • 12 oz
    spinach, frozen, chopped, and defrosted

How To Make side essentials: cheesy creamed spinach

    Gather your Ingredients (mise en place),

    Add the bacon to a saucepan over medium heat.
  • 4
    Chef’s Note: The saucepan needs to be big enough to hold all the ingredients.

    Cook until the bacon softens, and begins to render its fat, about 5 – 6 minutes.

    Add the onions, and cook until they soften, about 2 – 3 minutes.

    Add the garlic, and cook until fragrant, about 60 seconds.

    Reduce the heat to low, and add the heavy cream, the mozzarella, parmesan, and cream cheeses.

    Stir until incorporated, and fully melted, about 3 – 4 minutes.

    Chef’s Note: While the sauce is cooking, season to taste with the recommended spices, or be creative.

    Chef’s Tip: If the sauce seems a bit thick, add a bit of heavy cream, a teaspoon at a time, until you achieve the desired consistency.

    Add the defrosted spinach, and stir to incorporate, and warm through, about 5 – 7 minutes.
