- PLAN/PURCHASE
- 1 1/2 pounds carrots, cut on the diagonal, about 1/2-inch (1.5cm)
- 1 tablespoon olive oil, extra virgin
- 1/8 teaspoon ground cinnamon
- 3 slices bacon cut into 1/2-inch pieces, and partially cooked
- 1 tablespoon fresh clover honey
- 1 tablespoon fresh parsley, chopped
- - salt, kosher variety, to taste
- - white pepper, freshly ground, to taste

Step 1PREP/PREPARE

Step 2Cook the bacon, just long enough to render the fat.

Step 3Gather your Ingredients (mise en place).

Step 4Place a rack in the middle position, and preheat the oven to 400f (205c).

Step 5Cut the carrots up.

Step 6Toss with the olive oil, bacon, and cinnamon, then place into a baking pan, or dish. Add a bit of salt and pepper, to taste.

Step 7Add to the oven, and cook until the carrots are tender, about 25 – 30 minutes.
