1 1/2 lbcarrots, cut on the diagonal, about 1/2-inch (1.5cm)

1 Tbspolive oil, extra virgin

1/8 tspground cinnamon

3 slicebacon cut into 1/2-inch pieces, and partially cooked

1 Tbspfresh clover honey

1 Tbspfresh parsley, chopped

salt, kosher variety, to taste

white pepper, freshly ground, to taste
How To Make side dish essentials: roasted carrots with bacon

1PREP/PREPARE

2Cook the bacon, just long enough to render the fat.

3Gather your Ingredients (mise en place).

4Place a rack in the middle position, and preheat the oven to 400f (205c).

5Cut the carrots up.

6Toss with the olive oil, bacon, and cinnamon, then place into a baking pan, or dish. Add a bit of salt and pepper, to taste.

7Add to the oven, and cook until the carrots are tender, about 25 – 30 minutes.
