I have seen a lot of different recipes for this type of salsa. Some call it Texas Caviar, some call it Redneck Caviar, some call it Bean Salsa. I call it YUMMY!! My co-worker brings this to lots of work functions and it is always a hit.

Ingredients

  • 1 can(s)
    red beans or kidney beans
  • 1 can(s)
    black beans
  • 2
    avocados, diced
  • 1
    red onion, diced
  • 1 can(s)
    white corn
  • 2 can(s)
    rotel
  • ·
    handful fresh chopped cilantro
  • 1 c
    zesty italian dressing

How to Make Shelley Salsa Shuffle

Step-by-Step

  1. Drain & rinse beans.
  2. Mix all ingredients except dressing, in a bowl
  3. Pour in Zesty Italian Dressing

    Stir it up
  4. If you want it HOT, add Ro-tel diced tomato’s With Jalapeño

    Or your own Hottie stuff such as diced fresh or canned jalapenos.
  5. Serve with tortilla chips or on tacos, quesidillas or any Mexican food
