Something about this mix just worked!!! All the veggies came from the farmers market except the carrots & onion.

Ingredients
- carrots, julienned
- baby potatoes
- zucchini, chopped
- summer squash, chopped
- red pepper, chopped
- red onion, chopped
- olive oil, extra virgin
- italian seasoning
- garlic powder
How To Make sheet pan roast veggies

Step 1All amounts are up to you. Depends how hungry you are and which veggies you like the most & have in your kitchen.

Step 2Use other veggies if you want.

Step 3Chop veggies into pieces.

Step 4Toss with olive oil.

Step 5Sprinkle with a little bit of garlic powder & Italian seasoning.

Step 6Spread on a jellyroll pan. (I line with tin foil and spray with oil.)

Step 7Bake at 350 degrees F until all veggies are done. Usually takes mine 30-45 minutes.

Step 8Sometimes, the potatoes need to be parboiled or microwaved.
