scrumpious stuffed acorn squash
My husband would take me to lunch because he loved the squash at this certain resturant. One day he bribred our waitress with a big tip if she would get us the recipe.She did! Since I started making them at home, I didn't get taken out for lunch so often. My whole family loves these and insist they be on table at Thanksgiving!

Ingredients
- 1 - acorn squash
- 1/2 stick butter, melted
- 1 small onion, chopped
- 1/2 stick ritz crackers, crushed
- 1/2 teaspoon salt
- 2 - eggs, beaten
How To Make scrumpious stuffed acorn squash

Step 11-Cut squash in half, lengthwise. Hull out seeds with spoon. Put squash in pot and cover with water. Boil until squash is tender enough to stick fork into. DO NOT OVER BOIL. Usually about 20 minutes. Remove from water and cool until you can handle.

Step 22-Remove squash gently from shells with a spoon into a large bowl and mash. Add other ingredients reserving some of the Ritz crackers. Mix well. Here you can cut your shells again across and have eight pieces. Stuff squash mixture into shells. Sprinkle reserved cracker crumbs on top. Put on pan and bake 350* for 35 minutes.
