I honestly don't know when or how I came by this recipe but it is a great side dish!

Ingredients
- COMBINE:
- 1 cup bisquick
- 1/2 cup vegetable oil
- 4 large eggs
- 1/2 teaspoon salt
- AFTER MIXING WELL, ADD:
- 1/2 cup finely chopped onion
- 1/2 cup grated cheese (your choice!)
- 3 cups thinly sliced zucchini
How To Make scalloped zucchini

Step 1Mix everything together until it is well combined and pour into a greased 10 inch pie pan. (The original recipe used a greased 9x13 but I prefer the pie pan.)

Step 2Bake at 350 degrees for 30 minutes. It can sit on the counter for a few minutes and cool a bit before you serve it. You can cut it in wedges or just spoon it out.
