I found this recipe in the November, 1963 issue of Family Circle magazine. It is an easy, little-bit-different and very tasty way to dress up plain ol' lima beans.

Ingredients

  • 4 Tbsp
    butter (1/2 stick)
  • 2 pkg
    frozen lima beans (10 oz. each)
  • 1 tsp
    sugar
  • 1 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1/2 c
    water
  • 1/4 c
    chopped parsley
  • 2 tsp
    lemon juice

How to Make Savory Limas

Step-by-Step

  1. Melt butter in a medium-size heavy saucepan; add frozen lima beans, sugar, salt and pepper; add water and stir, cover.
  2. Cook slowly for 5 minutes; stir with a fork to mix with seasonings; cover again. Cook 15 minutes longer, or until tender. Add a little more water, if necessary.
  3. Sprinkle parsley and lemon juice over; toss lightly to mix.
