This is a great way to cook fresh spinach...tastes great and maintains most of the nutrients. Even people who aren't crazy about spinach like this satueed version.

Ingredients

  • 1 package baby spinach, prewashed
  • 2 tablespoons olive oil
  • - sale & pepper to taste
  • 1 - hard boiled egg (optional)

How To Make sauteed spinach by sallye

  • Step 1
    Heat olive oil to medium hot in a large heavy dutch oven or skillet When oil is slightly smoking, add entire package of spinach and cover pan with lid
  • Step 2
    RESIST THE TEMPTATION TO LIFT THE LID OF THE PAN FOR ONE MINUTE
  • Step 3
    After one minute, remove the lid from the pan Add salt and pepper to taste Stir the spinach around until all of it is cooked (generally about 1-2 minutes will do it) The spinach makes its own juices.
  • Step 4
    Plate and garnish with slices of hard boiled egg (optional)
