1/2 tsporange rind, grated
·orange slices, to garnish
How to Make Ruby Sauced Beets
- Combine the sugar, cornstarch, and salt in a large saucepan; stir well.
- Stir in the cranberry juice cocktail; cook over medium heat, stirring constantly, until the mixture is thickened and bubbly.
- Gently stir in the beets and the orange rind. Bring to a boil; reduce heat, and simmer; uncovered, 10 minutes. Remove to a serving bowl. Garnish, if desired, with orange slices.
